Description

The small town of Gioia del Colle near Bari where Marella produces a wide variety of handcrafted pasta from locally grown wheat, following family tradition. The varieties Senatore, Capelli, Simeto, Svevo and Duro Lucano, among others, are processed.

The pasta dough is pressed exclusively using bronze molds and then dried at extremely low temperatures between 38 and 40°. The result is a high-quality product with an expressive taste, which increases in size during cooking and, thanks to its coarse surface structure, combines well with sauces.
